Fried rice is such a comfort food. It’s my favourite, both to cook and to eat. My whole family loves fried rice. It is simple, easy and quick to dish up a meal and yet tastes very delicious. This Malaysian Country Fried Rice is very delicious. Crispy anchovies are always added. Other ingredients vary.


Daughter’s Comment On Blog Post

Just very recently my daughter cooked fried rice. It was very simple but tasted very delicious. I called it Special Fried Rice because she offered to cook it when she saw that I was very busy. I want to thank everyone very much for commenting on my blog posts because I’ve been learning from what you shared. From the Special Fried Rice post, I was so excited when Kristy at http://kristygourmet.blogspot.com mentioned about ‘kampong’ fried rice which is literally country fried rice. ‘Kampong’ is a Malaysian word meaning ‘countryside’. It just brought back sweet memories of my humble childhood days in the countryside where we didn’t have much to eat. Then Jeannie at http://chinadoll-bakingdairy.blogspot.com mentioned about crispy fried crab sticks added to fried rice. I just can’t wait to try that. Kristy and Jeannie really stirred up my craving!


Country Fried Rice at £8.20!!

My hubby loves to eat and insisted that we should go for Malaysian food one Saturday. I agreed obligingly knowing that we won’t be able to get like what we have back home and yet paying a lot for it. He called for curry noodles and I called for country fried rice. Both didn’t taste that great as expected. With the drinks, it cost 20 pounds, excluding tips!!! The waitress came and remarked, “Wow, you finished everything!” I was shocked at her remark. I knew she probably meant well but it sounded so crude. Well, of course we had to finish everything. It was so expensive and the portion was not too big.


Well, I really shouldn’t complain about the price maybe. I have been with friends to a popular hotel once for lunch and a simple burger with some chips cost £13.40!! The beef inside was so dry and tough. MacDonald burgers definitely taste much better than that.


Mission Accomplished!

That night, I told myself that I must cook it the next day! I want to tell my hubby that this is such an easy dish to cook at home….way cheaper and more delicious and I’m sure cleaner and healthier. I had all the ingredients at home. I still had some anchovies left after using it in Okra (Lady?s Fingers) And Anchovies Stir Fry. It turned out very delicious. My hubby liked it very much and was convinced that home cooked is still the best…..yeah. Mission accomplished….haha.


This Malaysian Country Fried Rice recipe is actually very simple and easy, yet tastes better than from restaurants. When you cook yourself at home, you can add more and higher quality ingredients.


Ingredients

4 pieces of crab sticks

1/2C anchovies

150g green beans (finely cut)

fried garlic oil

1T light soya sauce

1/2 t pepper powder

2C cooked rice

Shred the crabsticks, cut into halves and fry until crispy. Set aside. Wash the anchovies, pat dry with kitchen towel and fry until crispy, too and set aside.

Heat up some garlic oil and fry the green beans until cooked. Set aside. Heat up some garlic oil in the frying pan and add in the rice. Fry until fragrant. The best is to fry it with high heat where you will hear the hissing sound. Add light soya sauce and pepper to taste. Stir well and finally add in the fried crabsticks, anchovies and green beans. Mix well and dish up. Serve hot.


The anchovies and crab sticks are already very flavourful so do not add too much seasoning. Green beans are excellent for fried rice. I love to put a lot so that everyone gets to eat more vegetables.
