Malaysia boasts itself of endless wonderful one-dish meal. I think it’s impossible to try all in a life time because more are created each day. That’s all because of the beauty of a multi racial nation. Prawn soup noodles, locally called ‘Hokkien Mee‘, is just one of the very popular one dish meals. It’s spicy but very delicious.


I was first introduced to this most delicious dish when I was in Penang, also known as ‘Pearl of the Orient’. I fell in love with it immediately. So this dish is always known as Penang Prawn Noodles to me. This is one of my top family favourite, more so for me as I really love prawns. This is one dish that my family would ask for every now and then.

Like any other dishes, the taste varies all over the country. The best is to prepare from scratch but it’s quite a lot of work. You need lots of prawn shells and head and spices to grind or pound to make a very tasty soup. But for a quick version, just go for the ready paste. You may get the second best but it is still very, very delicious. When I am busy I go for the paste. I love this particular brand of prawn soup paste shown above. You can get it in most Asian shops.


This recipe is very simple and very quick to cook, great for a lazy weekend.


Ingredients

1 packet of prawn noodle paste

baby corn (cut into smaller pieces)

cooked king prawns

broccoli florets (cooked)

omelette

crab sticks (cut smaller)

coriander (chopped)

fresh noodles

Put 4 cups of water to boil. Add the whole packet of the prawn soup paste and the baby corn. Let it boil for about 15 minutes. While the soup is boiling, prepare the other ingredients and put them into individual bowls. The amount is enough for 5-6 people.


Back in Malaysia, you don’t see sweet corn in the soup. The topping is usually simple but at home you can add more topping. I love to add more vegetables to make everyone eat more vegetables. I love baby corns because it’s very healthy and adds to the sweetness of the soup. Prawns is one of my top favourites, so you can imagine my bowl well topped with big prawns…haha.

The soup is already tasty on its own. Adjust according to your taste. You can use some sea salt or chicken stock granules. Scoop the soup into the bowls and serve hot. If you like to have more kick to it, you can add some hot chili oil.
