Masala Khichdi(Spiced Lentils and Rice)
Rice 1 cup Orange Lentils(skinned and split) Masoor dal 1/2 cup Whole Brown Lentils-Sabut Massor 1/2 cup Onion (large) 2 no.chopped/Tomato-1 small chopped Potatoes (medium) 1 no.peeled and cut into small chunks..optional Green peas-handful dess.Coconut -2 tblsp (optional) Turmeric powder 1/2 tsp./Red chili powder 1/2 tsp./Asafoetida-Hing-pinch/Garam masala 1/2 tsp Cumin seeds 1 tsp.. Garlic 6 -7cloves grated /Ginger 1 piece.finely grated/Green chilies 2-3 nos chopped/juice of 1/2 lemon few strigs of Cilantro Finely Chopped/ Kasuri methi-2 tblsp/ Mint-7-8 leaves chopped/ Curry leaves-4-5 finely chopped Ghee/Oil 1 tblsp each Salt To taste Water -as required-approx 31/2 cup Note-1)Final result this dish wil b a little mushy ..taste good tht way with a dollop of ghee... 2)Tastes more flavorful with fresh methi leaves...when using fresh increase the quantity to 1/4 to 1/2cup packed and add after u add spices..and saute for 2-3 mins. Method- 1. Wash and soak the dal and rice for 1/2 hr chop onion and green chilies finely. 2. finely chop coriander leaves,mint leaves,curry leaves and ginger and garlic. 3. Peel the potatoes and cut into small cubes. 4. Heat 1 tablespoon ghee-1 tablespoon oil,Add hing,cumin seeds.add chopped curry leaves and add coconut.fry til light brown.add chopped onions. 5. When the onions are light brown add the minced garlic, ginger and green chilies.saute for 30sec.add tomato and fry til soft. 6. Then add the spices(turmeric/red chilly ).add potatoes and chopped cilantro and mint. 7. Fry for a while, put in the rice and dal and fry both nicely.add peas.saute.mash it a little. 8. Pour in warm water till it is about 2 inches above the level of the rice. If the water dries up, more warm water can be added. 9.Add kasuri methi,garam masala.lemon juice and salt. 10.When the water starts bubbling, lower the heat and simmer till rice and dal are cooked til soft n little mushy. 11.Sprinkle coriander leaves on top and tsp Ghee before serving.
