Masala Vadai curry and Chapathi - White Kurma:

Wish an excellent day to all of you there..! Here are my recipies: 1. Masala vadai curry: ![]() This curry is one of my favourite, got the recipe from my MIL. As she is a vegetarian, she make this often. The recipe for masala vadai can be found here. The curry recipe is, Ingredients: 1. Onion - 2 Chopped finely, 2. Tomato - 2 chopped finely, 3. Green chilly - 1 slit lenghthwise, 4. Grated coconut - 1/4 cup, 5. Poppy seeds - 1 tsp, 6. Fennel seeds - 1&1/2 tsp, 7. Curry leaves - 1 string, 8. Turmeric powder - 1 tsp, 9. Red chilly powder - 3 tsp, 10. Coriander powder - 4 tsp, 11. Ginger-garlic paste - 4 tsp, 12. Tamarind juice - 1/2 cup, 13. Salt - as per taste, 14. Oil - for frying, 15. Cilantro for garnish. How to make this: 1. Grind the grated coconut, 1/2 tsp fennel seeds, poppy seeds in to a fine paste and keep it aside. 2. In a kadai, heat oil, splutter the fennel seeds, add the onions, green chilly and curry leaves. Saute till the onions turn transparent. 3. Add the Ginger-garlic paste and saute a minute. Now, add the tomatoes and saute till they get mashed. 4. Put the turmeric powder, red chilly powder, coriander powder, salt and saute till the raw smell goes. 5. Now add the coconut paste and saute for 2mins till the oil floats. Add the tamarind juice and enough water for the curry and let it boil. 6. After 15 mins, when the curry little thickens, adjust taste and add the masala vadas and simmer for 5mins. 7. Garnish with cilantro. Tastes great with steaming white rice and appalam. 2. Chappathi - White Kurma: ![]() Ingredients: Chappathi: 1. Wheat flour - 2 cups, 2. Salt - 2 pinch, 3. Water - 11/2 cups, 4. Oil - 2 tsp. Kurma: 1. Potatoes - 2, 2. Green peas - 1/4 cup, 3. Onions - 2 chop lengthwise, 4. Green chillies - 5, 5. Grated coconut - 1/2 cup, 6. Poppy seeds - 1 tsp, 7. Garlic cloves - 5 Chop lengthwise, 8. Tomato - 2 chop finely, 9. Curry leaves - 1 string, 10. Turmeric powder - 2 tsp, 11. Salt - as per taste, 12. Oil - for frying, 13. Cilantro for garnish. 14. Cinnamon sticks - 1 stick, 15. Cloves - 2, 16. Fennel seeds - 1 tsp, 17. Cardomom - 1. How to make this: Chappathi: 1. Mix together the flour, salt and add water little by little and knead in to a soft dough and keep aside for 1/2 an hr to 1 hr. 2. Heat a tsp oil in tawa. Take small balls of the dough and press in to a circular chappatis and place on the tawa. 3. Cook both the sides till done. White Kurma: 1. Crush the fennel seeds, cinnamon, cloves, cardomom in to fine powder and keep aside. 2. In a kadai, saute the green chillies, poppy seeds, coconut with a tsp of oil. Cool and grind in to a fine paste. 3. In a kadai, heat oil and add the crushed spices and then add the onions, garlic and curry leaves and saute a min. 4. Add the tomatoes and saute till they get mashed. Now add the turmeric powder and salt and saute till the raw smell goes. 5. Now add the ground coconut-chilly paste and saute till the oil floats. 6. Now add the potatoes, green peas and saute till they get mixed with the masalas. Add enough water and leave to boil covered. 7. When the potatoes are cooked well, check taste and boil till the curry consistency and garnish with cilantro. I'm sending this chappathi to Roma's Space JFI - Wheat event.
