Me Ma's Corn Chip Casserole

I would like to give a big thank you to everyone for their thoughts, prays, and words of encouragement. You will never know just how much it has meant to me. All of your prayers have paid off. One of the custodians working in our school district fell and broke her elbow and had to have surgery a few days ago. I feel terrible this happened to her because Caroline's a great person, but it opened up a summer position for painting in the high school and elementary school. My Aunt Patti's a secretary to the superintendent and told me about the job. I turned in an application this morning and just found out I got the job! It isn't a glamorous job, and I'm sad I will be having to leave my kids, but it's money. Sometimes we have to do what we have to do. I start Monday morning. My hours are 6 - 4 Monday through Thursday. I will keep you posted.
My blogging buddy Tina at Mommy's Kitchen posted a recipe for Peanut Butter Frosted Cupcakes. I have everything for them and will be making them this week. She found the recipe
in a cookbook she highly recommends Mema's Manna Cookbook. While I don't own this cookbook I checked out the their website and it offers a sample recipe for Me Ma's Corn Chip Casserole. Man it's a good one! We really enjoyed it. At only 94 cents per serving, this recipe's a steal! I hope you enjoy it as much as we did :)
ME MA'S CORN CHIP CASSEROLE
1 lb. ground beef
¾ cup chopped onion
2 tsp. salt (I would recommend cutting this because the corn chips are salty enough)
½ tsp. pepper
1 Tbsp. Williams chili powder
1 pkg. corn chips (I only used 1/2 bag)
½ lb. cheddar cheese grated
1 (1 lb.) can brown beans (I used pinto beans)
1 (8 oz.) can tomato sauce
Brown beef in skillet; add onion, salt and pepper and chili powder. Arrange layers of corn chips, beef mixture, cheese, beans and tomato sauce in greased casserole. Repeat until all ingredients are used, ending with cheese. Bake at 350 degrees for 45 minutes. 6 servings.
