Me Ma's Corn Chip Casserole
My blogging buddy Tina at Mommy's Kitchen posted a recipe for Peanut Butter Frosted Cupcakes. I have everything for them and will be making them this week. She found the recipe in a cookbook she highly recommends Mema's Manna Cookbook. While I don't own this cookbook I checked out the their website and it offers a sample recipe for Me Ma's Corn Chip Casserole. Man it's a good one! We really enjoyed it. At only 94 cents per serving, this recipe's a steal! I hope you enjoy it as much as we did :) ME MA'S CORN CHIP CASSEROLE 1 lb. ground beef ¾ cup chopped onion 2 tsp. salt (I would recommend cutting this because the corn chips are salty enough) ½ tsp. pepper 1 Tbsp. Williams chili powder 1 pkg. corn chips (I only used 1/2 bag) ½ lb. cheddar cheese grated 1 (1 lb.) can brown beans (I used pinto beans) 1 (8 oz.) can tomato sauce Brown beef in skillet; add onion, salt and pepper and chili powder. Arrange layers of corn chips, beef mixture, cheese, beans and tomato sauce in greased casserole. Repeat until all ingredients are used, ending with cheese. Bake at 350 degrees for 45 minutes. 6 servings.
