Meatless Monday Feta Cheese Puffs

We are really getting the hang of Meatless Mondays these days and I find that we are even having meat free meals on other days of the week too, which is a good thing! I think my husband tells me every Monday: "Lovey, I do not want to eat meat for at least a month!" Then comes the next Saturday and someone lights a fire to have a braai(barbecue) and all his resistance crumbles! These feta cheese puffs packed a punch and with the topping of avocado, more feta and some beetroot shavings, they were not only delicious, but they were  filling, nutritious and most importantly meat free....

I make cheese puffs often, because they are perfect for lunch boxes, ideal for parties and even for a mid day snack they are just what the doctor ordered. Last year we had a fundraiser at church and we made little cheese puff  do-it-yourself bags and sold them at our market. All people had to do, was to add an egg and some milk. They sold like hot cakes! This time I wanted to use the Fairview brine-less feta that I had left from the FBI2011 workshop so I tweaked my standard recipe a little. The feta cheese was perfect, it made the cheese puffs salty enough so no other salt was needed. You can add what ever filling you feel like, just think goat's cheese, crispy bacon, more cheese, just butter and Bovril, smoked salmon, chicken and mayonnaise, the list is endless. I chose some meat free options Meatless Monday.



Meatless Monday Feta Cheese Puffs

 (Recipe yields 12 muffins)





Ingredients

2 cups flour

1 cup cheese(strong cheddar), grated

1 cup Fairview Brine less Feta Cheese - crumbed

4 x 5ml baking powder

salt and pepper

1/2 tsp dry mustard powder

2 eggs, beaten

milk



Method

Mix all ingredients, except milk. Add enough milk to make a thick lumpy batter. Spoon into muffin pans and bake for 12-15min at 180 C.



For my version I topped the Feta Cheese Puffs with Avocado that I mashed  with a little salt/pepper and lemon juice, some more crumbed feta, fresh rocket and a few shavings of raw beetroot.(which by the way is so good for you!)
