Meatloaf Sandwiches
One of the favorites in my house is meatloaf. Something I like even better is meatloaf sandwiches, but with my vacuum cleaner of a boyfriend sharing my dining room table, there is rarely any leftover to make sandwiches after the fact. So one day last week, I thought to myself – why can’t I just make meatloaf sandwiches from the get go? So I did! And even though this isn’t necessarily an easily packed lunch, I just can’t help it – this is “This Month’s Packed Lunch”. For one thing, I happen to like meatloaf sandwiches cold, and for another, they’re just damn good – morning after meatloaf or not. Meatloaf Sandwiches Serves 4. Leftover Potential: Patties keep well for a day or two and reheat well. 1 recipe glazed meatloaf toasted bread onions, lettuce, mustard, or other garnish 1. Prepare the meatloaf as per the recipe, but instead of forming it into loaves, form it into patties. Cook the patties in a saute pan or grill lightly greased with nonstick spray. 2. Cook the patties until they are brown on one side, about 4-5 minutes. Once flipped, glaze the meatloaf patties with the glaze. Continue to cook until they are cooked through, about 3-4 minutes more. 3. Serve the sandwiches on toast with any desired garnishes.
