Mediocre Monday

Dinner that is... My appetite seems to be rather non-existent these days. Not for lack of hunger, it seems the inspiration is lacking. 
With no clear direction I did what I do best. 
To the oven! 
And out came a plethora of all things roasted! 
Creole rubbed tofu
with baby bells, onions and fingerlings

A cake and a loaf and a few cookies later, I think I may be over drawn in the inspiration bank. 
This happens periodically, please bear with me.

I've made the executive decision to redeem this disappointing evening with a bowl of peanut butter puffins.
