MELANZANE ALLA PARMIGIANA
![]() Yesterday someone asked me how to make eggplant parmesan and I was very happy to give them this recipe. It is my Mom's recipe and I have used it for years. I love this dish and it can be served as a main dish too. Italy is a land of vegetables, zucchini, tomatoes, eggplant, cauliflower and many other vegetables are plentiful. The Italian markets in Italy are loaded with fresh fruits and vegetables direct from the farms. When purchasing your eggplants, look for ones that have a smooth unblemished shiny skin. You can see if they are ripe if you press the skin slightly. If it bounces back into shape, it's ripe. If it leaves an indentation throw it back! 2 lg. eggplants Salt Flour for dredging Seasoned Italian Bread Crumbs 2 eggs 1/4 c. milk Canola oil for frying 1/2 c. freshly grated parmesan 1 pkg. of shredded mozzarella cheese or fresh mozzarella sliced thin and cut into small pieces Your favorite marinara sauce Cut the ends off then slice the eggplants into circles 1/2-inch thick. Immediately salt the eggplant to draw out the moisture and prevent browning. Let them sit and drain on paper towels for about 20-30 minutes. Rinse off the salt and pat dry with paper towel. Beat eggs and milk together. Use three bowls, one for the flour, one for the egg mixture and one for the bread crumbs. First place eggplant in the flour, then the egg mixture, then the bread crumbs. Heat a large skilled with oil. Fry eggplant in batches on both sides until golden brown adding more oil as needed. Drain on a paper towel. Preheat oven to 350 degrees F. Place some sauce in the bottom of a casserole dish. Lay the eggplant on the bottom of the dish, put some sauce on top, sprinkle with some parmesan cheese and top with the mozzarella. Repeat the step one or two more times depending on the size of your pan. Bake uncovered in the oven for about 30 minutes until cheese is golden and bubbly. You may assemble this the day before but add more time to baking to be sure it is thoroughly heated. related searches : Melanzane
