Methi Matar
As i had plenty of fresh methi leaves in stock, i've decided to make something which my H surely likes. This is no tough job once u finish up with the grinding ..
Ingredients : Fresh Methi leaves -- 1 cup Frozen peas -- 1 cup Onion Puree -- 1 Medium onion Tomato Puree -- 1 Medium tomato Green chilly -- 2 nos. Ginger -- 1/2 an inch piece Garlic -- 2 pods Coriander powder -- 1 tsp Salt -- to atse Honey /sugar -- 1/2 tsp Half n Half /Whole milk -- 1/2 cup Turmeric powder -- a pinch Oil --reqd. Grind this to a powder : Cashews -- 5 nos. Cinnamon -- 1 inch piece Cardamom --1 no. Cloves -- 1no. Method : Grind green chilly,ginger and gralic and make a fine paste. Heat a kadai with little bit oil and add the onion puree once it's hot. Stir the puree ,close and cook it for 6 to 7 minutes until the oil starts leaving the sides and the by the time raw smell will be gone too. Now add the dry ground powder into this and saute well for 3 minutes. Now add the tomato puree ,wet grind mixture (ginger,garlic,green chilly)and combine well. Again close it with a lid and cook the mixture until u get rid of the raw smell. This might take about min 4 mts. Now add the methi leaves and the matar (green peas). Suppose if u use dried peas ,u've to soak overnight and pressure cook it for 3 whistles. Add the turmeric powder and the coriander powder and salt. Scald well the veggie's in the masala for a minute and add may be 1/4 cup of water to cook it. Once it is cooked, add the hlaf n half or whole milk (if u r health consciuos) and combine well. Give it almost a boil and add finally the sugar or Honey, Mix well and switch off. Note : I din't use butter (except for taking pics.. ) for the goodness sake. U may add if u feel u need it.. may be 1 tbsp of butter + 1 spoon of oil.. I din't add colour powder as it is not good for health..
