Mexican Hot Chocolate

Here in the Pocono's we're officially into that icky "sort of nothing season". Its not quite winter, not quite spring. We might get spanked with a snow storm or two, or it might just...rain, rain rain. On top of the lingering snow its pretty much just swampy, cold and miserable. There aren't too many things that can make the day seem any better, no matter how hard I try I just cant shake the ick. I'm a bit of a pessimist I know but days like this I just can not find the motivation to do ...well just about anything. So its a great time to whip up a batch of spicy hot chocolate. Although powdered hot chocolate mix is delicious in its own right thats something that we have around daily. This is something extra special, its not a lot of work however dirtying up a pot and lingering over the stove for a drink is just not something I do real often ever. Yes I know I'm lazy. This is a rich and decadent delight. The consistency is thick and almost pudding like, the flavor is absolutely deep and luxurious. Its smooth, slightly spicy and its not the sugary chocolate drink you would expect. It warms your mouth, fills your belly and sooths the soul. 




 


 Mexican Hot Chocolate
This is delicious, rich and satisfying. You can season it as heavily or lightly as you wish. I've tried cinnamon, chili powder and cayenne. I prefer it without the chili powder however I assure you, you may just love it. Its worth a try right? Just add a pinch to a small serving, if you love it add more to the pot. 


This can be served with whipped cream and cinnamon sticks as stirrers, or even churros. I had it with home dipped chocolate covered pretzels. Its not super reminiscent of the churro but it gives you a slightly savory, salty bite to cut some of the richness. The Bonus: it does not require a pastry bag or a deep fryer. Yes, yes I know I'm lazy. Have I mentioned that before?


3 ounces bitter sweet chocolate , chopped up
1 cup heavy cream (or milk)
2 cups milk
2-3 tablespoons sugar 


Stir ingredients together in a medium sauce pot. Whisk over medium heat until smooth and combined and the chocolate is completely melted, spice as you'd like it. Serve warm. 


Spice it Up-
You can Spice to taste or try this
Pinch of cayenne and chili powder
1/2 teaspoon cinnamon
