Mexican Rice Bowl

A couple of weeks ago ,my hubby took us to Chipotle and ordered a rice bowl...I just couldn't believe it coriander spiced rice topped by your choice of meat-range from grilled chicken to stewed beef and freshly chopped tomatoes mixed with chopped red onions.Just image a bowl of rice topped with fresh ingredients and very healthy too. No wonder my hubby doesn't want take lunch on Friday..He's just enjoying himself comfortingly sitting in Chipotle and tasting these healthy rice bowl.There's no rules in how one should prepare these rice bowls..I wanted to give a shot: Just simply based the bowl with hot rice and topped with your choice of fully seasoned proteins and vegetables.Here's my version of Chipotle's Rice Bowl and was a big hit in my family.

Mexican Rice Bowl

Ingredients
Serving Size:4

For the Rice:
1 cup cooked rice
1 cup finely chopped coriander leaves
juice of half lemom
2tbsp olive oil
salt to taste

Preparation Method:
Heat oil in skillet and saute the coriander leaves for 2 minutes, Then add the rice and 2tbsp lemon juice.Toss and season with salt.Remove and transfer to serving bowl

1 big red onions roughly chopped
1 green bell pepper roughly chopped
salt to taste
1tsp pepper powder.

Heat some oil in a skillet and toss all the ingredients. Saute them till the onions and peppers turned tender and browned. Remove and keep aside.

1 red onion chopped finely
1 ripe tomato chopped finely
1 green chillie minced
1tbsp lemon juice
1/4tsp salt

In a large bowl toss all the ingredients and mix well.Keep aside

1 can black beans -liquid drained
1 cup corn
1 cup shredded grilled buffalo chicken
1 cup guacamole
1-2 cups shredded cheddar cheese
1 cup finely chopped lettuce
1 cup tomato salsa
1 cup sour cream
1/4 cup stored brought salsa verde (a mixture of tomatoes and jalapenos)

Assembling the Mexican rice Bowl:
In a large bowl layer the base with the coriander rice followed by the sauteed onions and bell pepper. Then add the black beans followed by the shredded chicken.Add the onion and tomato mixed followed by a couple spoonful of the salsa verde. Then add the corns,tomato salsa and chopped lettuce leaves. Finally add the shredded cheese and big spoonful of sour cream and guacamole. Sit back and enjoy each spoonful of these health rice bowl.
