Mexicano Veggie Bowl

In honor of Meatless Monday I decided to make a delicious and easy favorite! I love Chipotle and can't get enough of it, but my bank can! So I've created my mock version to curve my craving for a $7 bowl (costing around $3-$4 for my 2-3 servings)! There are two different ways you can make your rice. Depending upon which way you choose will depend upon how many servings you will have!

Prep: 5 minutes
Total: 20 minutes (if that)
Serves: 2-3

Ingredients:1 cup Uncle Ben's Spanish Rice1/4 cup frozen mixed veggies (peas, carrots, and corn)
1 can of Black Beans1 tsp EVOO1 bell pepper (multiple colors to equal one)
1/2 small onion
1/2 tsp diced garlic1 squirt of lime juice
2 tbsp shredded Mexican cheese
3 tsp's favorite salsa (I like Jack's Special Salsa)Salt & pepper to taste
1. Cook 1 cup of Uncle Ben's Spanish Rice in a rice cooker (add a little salt to taste and extra flavor).  Add the frozen veggies about half way through stirring only once until ready to serve.
*If you don't have the Spanish rice in a bag you can buy the Uncle Ben's 90 Second Spanish Style rice. Taste just as good.... heat up the rice in a microwave container with the frozen vegetables. Place a lid on top allowing little ventilation and cook for 90 seconds.

2. While the rice is cooking juliane 1 bell pepper. This time around I used half of a yellow bell pepper and half of a green. Juliane half of one onion.

3. Place evoo and garlic in saute pan along with vegetables. Place on medium high heat with lid until cooked to your liking (I like mine with a little crunch... so about 5 minutes).

4. Cook can of black beans on stove top or in microwave.

5. Plate 1-2 scoops of rice at the bottom of a bowl, followed by black beans, and veggies. Top with shredded cheese and a dab of your favorite salsa brand.

6. Enjoy now and with any leftovers eat it later!!!
