Mini (English) Muffin Pizzas!

They’re slightly grown up pizzas though, in that they are topped with asparagus and less cheese. Asparagus is something I never had as a kid, how about you? I probably found out about it thanks to Neopets XP. I would have sprinkled the pizzas with dried basil and oregano had I remembered to, now that would have been good. The “sauce” on these is actually two handfuls of grape tomatoes cooked in a pot while mashing with a fork until they became spreadable and kind of saucy. Also the English muffins are whole wheat. When I was a kid, I wouldn’t go near whole wheat bread, but now I think it’s pretty yum. Whole grain is so good, though =). I for sure remember these from my childhood. I can’t remember if it was my mom who made them, though chances are it was. Did anyone ever make these for you? If you have children, do/did you make these for them?
