Minted Hot Cocoa
2 tablespoons cocoa powder 2 hard pepper mint candies (crushed) 1 cup hot water 1 cup low-fat 1% milk 1 teaspoon vanilla extract 3 packets of Splenda (use what you like, I like Splenda) Combine the cocoa, candy and hot water in a large microwave safe container. Stir well and microwave on high for 1 minute. Stir again. Add the milk and vanilla and continue to microwave for 1 1/2 to 2 minutes or until hot. Stir in the Splenda and serve immediately. Because I added the additional candy I ran this recipe through myfitnesspal.com. Serves 2: 109 calories, 2 grams of fat, and 2 grams of fiber
