Mix ?n Match Cake (Healthy AND Low-Calorie)
For anyone that saw my “any way you like it” cookies, this is the same idea, but with cake. You can make it vegan, you can make soft, you can make it dense, you can even make it savory. Just make it! And come back after to let me know how it turned out. Healthy, “any way you like it” CAKE (microwave) Start with some dry? 3T. mashed Fiber One Original Bran (mash it till it has the consistency of flour) 3/4 t. baking POWDER Add about 2 T. (1/8 c.) total of? Nut flour (peanut, almond, pistachio, etc) Oat bran Flavored powdered gelatin (you’ll want to mix this with something else because the flavor is super-strong) Oat flour (oatmeal blended until it?s the consistency of flour) Protein powder (any type) Nonfat dry milk powder All purpose flour Cocoa powder Wheat bran Wheat germ Flaxseed meal Low-calorie drink mix Sugar-free hot chocolate mix Any combination of the above Now, for the wet, add a total 6 T. (3/8 c.) of? Natural applesauce Melted butter Nut/seed butter (peanut, almond, pistachio, etc) Flaxseed meal mixed with water Yogurt (flavored or plain) Eggs/eggbeaters Cooked lentils Sugar-free jelly Guar gum or xanthan gum mixed with water Pureed fruit (banana, berries, peaches, etc) Canned unsweetened pumpkin Pudding (prepared from mix or pre-made) Low-fat/fat-free cream cheese Milk Any combination of the above Toss in some? Sugar-free syrup Extract Dried herbs Chocolate chips Nuts Spices Any combination of the above And don?t forget to add some sweetener and/or salt if you feel the need?
In a different bowl, whisk the fiber one, ?floury substance,? and baking powder. Add the contents of the second bowl to the contents of the first and mix well. You want the consistency to be half way between cake and drop cookie batter. You might need to add a little more liquid. DO NOT COVER. Microwave for 4-7 minutes. My microwave sucks, so adjust accordingly. You want it dry as a rock but not burnt. It’s tricky to get it right the first time, but once you figure out the time in your microwave (mine is 5 minutes), it works every time. Take it out of the microwave and drizzle/pour any liquid of choice over it. It will soak up the liquid like a sponge (literally!). Try lemon juice, coffee syrups or anything else that comes to mind. Depending on the liquid you choose, you might need to add a little water too. Add enough so that, when you poke it, your finger feels like it?s poking a regular cake. COVER IT with a medium bowl, opened up cereal wrapper (green tip of the day), saran wrap or anything else. Microwave for 30-40 seconds, just enough to make it nice and hot again and let it soak up any extra liquid. For a real treat, make the tiramisu pictured above by making a “plain cake” (any unflavored “floury substance”), soaking it in prepared and cooled kahula coffee, and layering it with my with whipped cream (made with cheesecake pudding) folded with some greek yogurt. related searches : Mix
