Mixed Fruit Twist
I still had some popcorn stored away in the fridge. Instead of throwing them away, I added a little bit of twist to the usual popcorn bread. Ingredients: 600g bread flour 100g wholemeal flour 240 g Water Roux Starter 1 egg, lightly beaten 2 teaspoon salt 2 table sppon yeast 50 g butter 3 cups milled popcorn (caution: they?re very light and tend to fly around) 80 g firmly packed brown sugar 120 ml milk 1 cup dried mixed fruits 1 tablespoon honey for glazing Method Mix all the ingredients, except milk and honey and combine well. Slowly add the milk until the mixture is no longer too dry and can be stirred gently. Transfer the lumpy dough onto a lightly floured surface and knead for about 15 to 20 minutes or until the dough is smooth and doesn’t stick to your hands. Put the dough in a container, cover with a damp cloth and let rise for 1 hour. Divide the dough into 6 portions. This will make 2 braids as you need 3 to make a braid. Roll the 6 portions of dough into this strips. Use 3 strips to start a braid as shown: Make 2 braids. Slowly put the 1st braid onto a bundt tin and continue the end with the beginning of the 2nd braid.
Cover and let rise for about an hour. Preheat the oven at 220 deg Celcius. Glaze the risen dough with honey. This will give the crust a sweet crunchy taste! Bake for 40 minutes. Before serving toast for 5 minutes in oven related searches : Mixed Fruit
