What goes around comes around!



I do indeed believe in the concept of karma-you know-that what you give out comes right back atcha-most often with more intensity than that which you gave off.


I had been dreaming about cherry pie of late. Inspired by the shiny, red fruits at the market, I was dreaming of all sorts of ways to indulge in the season of the cherry. I had grand plans of making a cherry pie. I went through the process on several occasions of going to the market, purchasing cherries, returning home, making the pie crust, placing the dough in the refrigerator to chill, washing and pitting the cherries….and…..eating them off!!!



One by one!!!


This happened on three occasions. They were adorably delicious on their own, without any dressing or outer shell, and I could not stop myself from eating them off.



Last week, I went through the same procedure and purchased a but more than half a kilo of cherries, enough to eat as is and enough to use some for a pie. Feeling overly happy and very generous thoroughly enjoying the sun, I stopped off at a shop on my way home. I noticed the lady at the counter and decided to offer her a couple of my gorgeous cherries. I held the bag for her to dip her hand into and asked her if she wanted a few cherries.



She smiled at me, thanked me, then smiled even more and took the entire bag of luscious, perfect cherries from my hand-the entire 500 glorious grams. I looked at her, confused, and not really certain as to how to respond. Should I make it clear that I only wanted to offer her A FEW of my cherries, and not my entire bag!!!! I guess that I should have taken out her portion beforehand. Oh well…I did not have the heart to tell her and so I Iet her enjoy the cherries. She was smiling so widely that I had no choice but to let her indulge.



I returned home, cherry-less, but happy nonetheless on recalling the way in which this lady smiled when she took the bag. On the following day, I went to my local organic supermarket and looked for some cherries.


Gone.


Finished.


And so, I purchased my usual necessities and made my way to the counter, feeling somewhat defeated. Then, I did a major turnaround on my heels and decided to get some blueberries to make some muffins! Yes, that is what I will do!



As I packed my bags to leave, the man behind the counter recalled that there were some left-over fruits from yesterday in the back and offered me some. He went to the back and brought back about 3 kilos of overly-ripe bananas-those he says that nobody wants, and a handful of cherries, which were not anything as perfect as those from yesterday, but with a bit of help could me made into….perhaps a pie!



WOW!!!


So, I gladly took the gift of fruits and returned home to make a banana cake, some banana muffins, a banana bread, an entire blender full of banana shake, froze some banana puree for some banana ice cream later on, a cherry and blueberry pie or rather a blueberry-with- a -few-cherries-pie-, and some blueberry muffins!


I spontaneously invited some friends of mine to come over and we had a wonderfully lovely afternoon. In fact it was a perfect afternoon! It was absolutely perfect with lots of laughter, exchange, singing, listening to music and all that accompanied by the food I was able to make from the fruit I had received. Once my friends had left and I had cleaned up…I just sat there in my kitchen feeling such a sense of happiness and gratefulness.



I gave away a half kilo of cherries and made one woman very happy. On the following day, I received the three-fold amount of fruits, which made me incredibly happy, along with my friends!


I definitely do believe that what goes around comes around.


MOIST BUTTERMILK BLUEBERRY MUFFIN RECIPE


Moist Buttermilk Blueberry Muffin Recipe:

2 1/4 cups or 325 grams all-purpose flour
3/4 cup or 100 grams of raw cane sugar or brown sugar
2 tsp. baking powder
1/2 tsp. of baking soda
1/2 tsp. of salt
2 large eggs
3/4 cups of buttermilk or yogurt
2/3 cups of oil
2 cups of fresh blueberries
1/4 cup of brown sugar
1 tsp. of cinnamon

Instructions:

Preheat the oven to 365 degrees F (180 degrees C).
prepare 12 muffins tins by buttering an flouring them.
Whisk together the egg, buttermilk, oil, and vanilla extract in a large mixing bowl.
Combine the flour, sugar, baking powder, baking soda, salt, and orange zest. in another large bowl.
Mix in the wet ingredients into the flour mixture by using a large spoon or spatula, and stir until the mixture is just combined (Your mixture will be lumpy). Make sure not to over-mix or-else your muffins will not be as moist and fluffy!
Now, gently stir in the blueberries, until they are evenly distributed.
Mix the brown sugar and cinnamon together and sprinkle each muffin with a bit of this mixture of top if desired. It offers a nice slightly sweet edge to each bite I find!
Fill your muffins tins to about 3/4 full.
Place in the oven and bake for about 20 minutes.
Remove when ready and wait 10 minutes before taking them out!
