More catching up
Hello! I'm going to pick up my eats where I left off yesterday, which would be Sunday, and today is Thursday. Confused? Good.
We got up on Sunday and sadly had to come back to reality. But, as is tradition we stopped at Cracker Barrel for breakfast. Another Shannon breakfast: Oatmeal! Again! I crumbled about half of the muffin into my oats along with the rest of the banana = heaven. In a bowl. After the long drive home to my parents house, then the long drive home to Lake City, I was hungry. We actually made awesome time and I was home by 1:30...I think. After being reunited with Thad, we decided to make lunch and watch a movie together. We watched Food, Inc. I highly recommend it. Sunday lunch was a hummus + sprouts sandwich on Ezekiel bread and kale chips: Sunday dinner was exactly what I was craving, a big salad with romaine, artichokes, grape tomatoes, sweet onion, feta cheese, and greek yogurt on top. On Monday morning, I woke up feeling so awake and fresh. I love that! I went for a 4 mile run, then made another craving, quinoa cereal. I roasted quinoa in the oven at 400 for about 15 minutes, added a couple glugs of almond milk and some blueberries + cinnamon, voila: Sorry for the blurriness. Homemade cereal. Love it. It tasted just as good as any store bought stuff. Then again, I think anything homemade is better than store bought. For lunch, I used up some veggies (tomato, bell pepper, zucchini) that were on their last leg and made a sandwich on an Arnold's sandwich thin with dijon mustard, alongside leftover kale chips: And dinner was sun-dried tomato, basil and feta cheese stuffed chicken breast with roasted broccolli and cauliflower: The chicken turned out really good. It was a recipe from my 2007 Light & Tasty Annual Cookbook. Ok, so that catches me up through Monday night. Blogger is still taking forever to upload my pictures. I promised myself I'd got to bed early or at least "on time" tonight. I'm wiped. Going to bed at 11 and waking up at 6 just doesn't work for me on a regular basis. I don't know how I used to keep later/earlier hours. I'm getting old ;).
