Mousse deliciousness

Hey my faithful readers!  What a day it’s been.  My plans were not to blog tonight or really at all today, BUT this is something I look forward to doing every single day and quite frankly I need the stress relieve today!


Russell and I received the saddest news ever last night.  Russell’s brother and sister-in-law gave birth to a beautiful baby boy on April 10th.  Following birth, he was having some respiratory issues, but was home with Mom, Dad, and big sister within about 5 days.  Sadly, little Madoc died last night.  :(    Madoc would have been 2 weeks old tomorrow.  Today’s autopsy revealed that he had a hole in his heart that wasn’t allowing him to get enough oxygen.  Ohhh how my heart is broken.  My brother-in-law and sister-in-law live in Vegas, obviously more than a few hours away from Tennessee so we hadn’t even gotten the opportunity to meet him and hold him ourselves!  We are currently trying to figure out flights, funeral arrangements, work schedules, etc. for next week. Prayers…..


Onward I will blog for stress relieve purposes tonight. 


Today, I took a sick day from work. (BUT I only go half a sick day really because there was no one to cover my a few of my afternoon appointments)  Woke up kinda ridiculously late….hmmm about 11.  :)   Multiple contributing factors for the sleep increase:  new med at night for allergies that cause drowsiness, fighting off illness, AND I couldn’t sleep last night after finding out the news of my nephew.  When I did finally get up, I still wanted a breakfast-ish food.


Breakfast:



2 slices of Ezekiel cinnamon raisin bread with Smart Balance spread and cinnamon.




And 4 scrambled egg whites made with spinach, mushrooms, and a tad of pesto. 



And let’s not forget the coffee press coffee.



Made with truvia and skim milk.


I didn’t get much accomplished at the house today before having to head into work for a few hours to see a few patients.  Got the dishwasher unloaded and loaded, a few emails sent, and well, that’s about it.  Oh well.


Snack(s):


No lunch today really, just snacks.




2 graham cracker sheets topped with natural PB and a banana made for a perfect snack.



Snack #2



A protein shack made with 10 oz of plain, unsweetened skim milk and a scoop of whey protein powder.  Also fresh blueberries. I didn’t drink my whole shack…..I didn’t like it much.


On my way into work, I got a request for hot beverages.  I can do a coffee run better than anyone!!  Also, Starbucks was TOTALLY needed today!



I had my usual, bold coffee with steamed skim milk and a truvia.


Work was easy, breezy and was probably a good thing for me for a few hours today!  Following work, I headed to the gym.  I ate some raisins and almonds on the way there….no pic though.


Russell and I ran into Tyler and Kim as we were walking into the gym.  Somehow I talked Tyler into staying and working out with me and then going out to dinner with us. 


I just ended up doing cardio tonight.  And I actually RAN outside!!!  I ran the upcoming local 5k route!!!  This is the first time I’ve run outside since the Gasparilla half marathon in Florida.  I started with some intervals on the treadmill first and then Tyler and I decided we were bored on the dreadful treadmill and headed outside.  So I ended up running at least 3.5 miles today between the treadmill and outside.  YAY!!!  My knee is not hurting now, it just feels tight. Come’on knee, work with me!!!


Following the gym, we headed to the ‘Shroom.



Mellow Mushroom is so fun and tasty!



I ordered a small Mega-Veggie pizza (minus the banana peppers add pesto) which is to die for!!



I ate about 2.5 slices tonight and brought the rest home to be enjoyed sometime in the near future!!  Oh yum….this pizza is sooo good…..Mellow Mushroom’s pizza crust is delicious too!


Following the ‘Shroom, the 3 of us decided a cold treat was in order




The Italian ice and custard both are delicious!  I decided on a “Slenderita”



I got a kiddie cup slenderita



This is the perfect serving size to allow me to have a few tasty bites and to satisfy my sweet tooth.  And if you haven’t had custard from a place like this……get in your car now and go find some…..it’s AHHHHH-mazing!!  It’s like cold, whipped mousse deliciousness!  :)


Tyler enjoyed his a little too quickly………..



Tyler told Russell and I since we bought his Rita’s ice tonight that he would buy us a house….DEAL!  Pay up buddy!  :)
