My favorite dinner
Winner, winner chicken dinner. Chicken nachos ROCK!!!!!! But first, the rest of today’s eats. This morning Kimmie couldn’t meet me at the gym and I just could do Insanity solo this morning. I decided a treadmill run was in order. I enjoyed bar and some coffee on the drive. I love, love, love Kind bars!! And I love that this healthy treat is also sold at Starbucks. My bar was washed down with coffee made with skim milk and truvia. This morning, I was trying a new coffee pod brand/flavor. I enjoyed it. Here is some randomness for you…..I wish I was a coffee-know-it-all!! You know how some people are wine-experts or wine connoisseurs…..I wanna be a coffee connoisseur. I got a 4 mile run in on the treadmill this morning, along with some negative splits. Also a good stretch. My left IT band is not hurting, it’s just been tight the rest of today, ever since my run. I plan on stretching some more tonight. Breakfast This morning I opted for an old favorite, that I haven’t made in a while. PB, J, and banana oats 1/2 cup oats 1 cup water banana spoonful of MaraNatha PB spoonful of Polaner fruit preserves Along with my oats, I had a mug full of french pressed coffee with frothed skim milk and truvia. Lunch I decided to pile on the veggies today at lunch. I piled them high on an Ezekiel wrap On the wrap went: pesto mozzarella cheese chickpeas short grain brown rice [made yesterday morning during my productivness] spinach chopped onion bell peppers (red, yellow, and orange) My wrap was great…..I really loved the pesto, but then again, I love pesto on everything. I also enjoyed some fresh berries on the side Snack I barely got time to scarf snack down today. The afternoon was jam-packed with appointments today. I had planned on dumping this 100 calorie pack of nuts on top of some grapes, but I needed something a little quicker to eat. Luckily, I had this bar with me. This apricot bar was really tasty!! Following all my afternoon appointments, I finally sat down and ate my grapes Dinner I arrived home to my house smelling delicious! My favorite meal, Chicken Nachos, was in the crockpot and I couldn’t wait to devour it. Russell and I had my sister as a dinner guest tonight. Since we’ve moved, she now lives maybe 3 miles away. Dinner started this morning… and for the first time, I was using an Amy’s Organic salsa I set the table and waited for my sister to arrive Then we dug in. Check out my plate: Jalapeno FSTG chips Multigrain FSTG chips chicken, salsa, and black bean combo from Crockpot chopped onion bell peppers short grain brown rice topped off with greek yogurt Seriously, for a dinner to be soooo simple, it’s almost wrong that it’s so freakin’ good! The hubs and I are both sitting on the sofa, on our laptops, listening/watching America’s Got Talent auditions in NYC. Do some of these people really think they are good?!?!!? Off to enjoy the rest of our lazy evening. Night
