My Favorite Snack
So if you’ve read this blog even once before, the likelihood of you seeing something with an egg on top is very high. I love eggs. But I won’t go on about them anymore than I already have. Instead, I’m going to tell you about one of my favorite snacks. It combines my love of eggs and toast with my love of avocados and toast. Yup…avocado + egg + toast = one delicious snack (or lunch, or light dinner, or anything really). And though I’ve gone on and on about my love of poached eggs and fried eggs and over easy eggs, I have never discussed one of my very favorite favorites: the soft boiled egg. A recent visit with my Aunt Patti and Uncle Jack brought us around to the subject of soft boiled eggs…one of my Great Uncle John’s favorite foods. As Jack detailed his method for the perfect soft boiled egg, my stomach growled. My only regret is not jotting it down (hopefully I can snag it from him and share it here…) but in the meantime, this method works just fine and results in one tasty treat. My Favorite Snack Serves 1. Leftover Potential: Make this anytime, anywhere…but it’s not for leftovers. 1 piece whole wheat or rye bread, toasted 1/2 avocado, mashed coarse sea salt, to taste freshly ground black pepper, to taste 1 egg 1. Mash the avocado onto the toast and garnish generously with coarse salt and freshly ground pepper. 2. Place the egg in a small pot (make sure it’s covered with water by at least 1 inch), and bring the water to a boil. 3. Let boil for 3 1/2 minutes. Immediately remove the egg and rinse it under cool water. Let sit until cool enough to touch. 4. Cut the egg in half over the toast. Enjoy!
