My Portuguese Seafood Rice Recipe
Seafood rice is one of my all time favorite dishes. In Portugal we have plenty fresh seafood at a reasonable price but for this recipe you can also use a mixture of frozen seafood. Below is my step by step recipe: Ingredients: ~ 600 gr of different seafood types ~ 1 Onion ~ 1 Garlic clove ~ 2/3 Tomatoes ~ 2 small pieces green bell-pepper ~ 1 Cup Rice (200/250 gr) ~ 2 Tablespoons Olive oil ~ Fresh coriander ~ Salt & black pepper Directions: Put one medium size chopped onion with one garlic clove and two tablespoons of extra-virgin olive oil in a pan. Take to stove and fry until the onion is golden. Add chopped tomatoes and cook for 5 more minutes. Use a blender to liquefy tomatoes and onion mixture. Add 4 cups of water (1 liter), green bell pepper and take it to stove again. Add the rice, mix well and after 3 minutes add the seafood mixture. Season with salt and black pepper (pepper is optional). Cover the pan with a lid and let the seafood rice cook for 5 more minutes. Sprinkle with fresh chopped coriander, mix and cook the seafood rice for a couple more minutes. After turning off the stove cover the pan with the lid again because the rice will finish cooking by itself. Here´s a picture of the final result: Serves 4. Enjoy! related searches : Portuguese
