MYSTERY MAC N CHEESE & COLLARD GREENS

By now you all know I am taking recipe request that you ask for and showing you how I make them.  This no different.  About four people ask me to do a Macaroni N Cheese and collard greens!! I thank them sooo very much for asking me I love you guys soo much.  Don't ever be too shy to make a recipe request because you make all of this possible.  What I like most about your request is you request things I haven't cooked in a ages and allow me to put my own twist on it!!

The video I made for these recipes is a little different!! It all because my subscriber mskrys82 made a request but not just any request.  She wanted to see how a soul food dinner looks in my house and I was glad to do it!!  My dinner was small but it was enough to feed five.

The secret to this meal is everything is smoked.  If you never had anything smoked in your food then give this a try!!  It add so much flavor you will love it!!

COLLARD GREEN:

4-6 bunches of collard greens( washed and dried
1/2 of red bell pepper
1/2 of green bell pepper
1/2 of yellow bell pepper
1/2 of a onion
1 package smoked pork bones or 2 smoked turkey legs
1 TBSP-minced garlic in a jar
1 TBSP-chopped jalapeno in a jar
1/4 cup-sugar
1 to 2 TBSP-vinegar
*vegetable oil
*seasonings to taste

MAC N CHEESE:

1 box of penne pasta
1 package of chicken gravy mix
1/2 cup-Gouda cheese
1/2 cup-smoked fontina cheese
1/2 cup-smokey jack cheese
1/2 cup- smoked cheddar cheese
3 &1/2 cups- milk
1 stick of butter
2oz cream cheese(softened)
1 cup-toasted panko bread crumbs( I didn't toast mines and it took longer to brown)
1 egg (beaten)
*pepper to taste( with the smoked cheeses you don't need salt.)

You'll need a round baking dish greased.

Preheat oven 350 degrees

* You don't have to cook the sauce just combined everything together and pour over pasta.

Note: In the video I made two pans of this, so the ingredients above are different.

Greens First.....

1. Boil the meat until tender, set aside.( You may need to add more water during this proccess, do not drain)
2. Heat oil over medium high, saute bell peppers and onion until they start to become tender.
3. Start add the greens as they to cook down add more.
4. Once all the greens are in the pot, add seasonings, jalapeno, garlic, sugar, and vinegar.
5. Continue cooking for 45minutes to 1 hour or until tender. ENJOY!!!

Mac N Cheese.........

1. Cook pasta until al dente according to package, drain set aside.
2. In another pot, combine butter and gravy mix cook until butter melts.
3. Add milk cook until thickens.
4. Put in jack, fontina, cream cheese, and gouda cheeses continue cooking until cheese melt.
5. Whisk some of the cheese sauce in the egg, Then whisk the egg back into the pot.
6. Strain mixture over the pasta.
7. Pour it into a baking dish, top with smoked cheedar and bread crumbs.
8. Bake for 15-20 minutes(Do not over cook)
