Needing a Break from My Break
Good morning everyone!! It’s another beautiful day here in Central Iowa – seriously, where is this weather coming from?? It’s supposed to be sunny and 64 today…I can deal with that. After a sweaty morning Mom walk, I translated one of my favorite snacks – apple slices and almond butter – into breakfast, and made Apple & Almond Butter Oatmeal! In the mix: 3/4 Braeburn apple (peeled, chopped & nuked for 90 sec.) 1/2 cup old fashioned oats 1 cup water dash of vanilla & cinnamon scoop of almond butter Not the prettiest bowl on the block, but super thick, hearty and tasty. I sprinkled the top with a little pumpkin pie spice. The nutmeg in it was reeeally good! Lunch is leftover Mexican - yes!
We’ve got 3/4 of a Bean Burrito and 1/2 of a Cheese Enchilada. Both doused in red sauce and 100% delicious. I think stuff like this tastes even better the second day.
I also packed some baby carrots for freshness. Time to head to work…although I feel like I just left! Sometimes after a weekend like mine, you need a break from your break. Know what I mean?!
