New Years Day Food....
Happy Tuesday! I hope your New Year started off great! I have a lot of catching up to do on my blog reading! It was nice to be away from the computer for 3 days, but at the same time I missed blogging and I really missed reading everyone's blog.
I can't wait to see what everyone had to eat on New Years Day. Here in the south the tradition is to eat cabbage, black eyed peas, cornbread and hog jowl (yuck). I had a veggie sausage pattie in place of the traditional meat. :o) It's so funny that I eat cabbage now, because pre vegan days, I wouldn't have touched it, much less eaten it. I do love it now though. I fried the cabbage with some onion in a little olive oil, a splash of balsamic vinegar, salt and pepper. My husband even had some, which is huge because he does not like green stuff. I added some of my homemade green tomato salsa to my black eyed peas, which made them exceptionally good!
My husband thought they would be pretty with powdered sugar sprinkled on top. :o)
About New Year's resolutions and goals, I actually think I have come up with too many....go figure. One big one is to get on an exercise plan and to clean up my diet. By cleaning up my diet, I mean to not eat as many processed foods and sweets. I also want to to incorporate more raw foods into my diet. As far as exercise, this should be exciting now. We got a Bowflex for Christmas...woohoo! But, it's still in the box...not put together yet. :-( This will change by this weekend though (hopefully) and an exercise plan with be put together. :o) I'm so excited about getting back into shape. I used to work out faithfully up until about 3 years ago. I've just gone down hill since then. So, one New Years goal is to get in shape...inside and out.
