Non-Microwave Eggless Vanilla Butter Cake !
![]() ![]() ![]() This cake is a puffy, flavoury, soft and buttery eggless delight. I checked out the recipe from Mrs.Kannan's 'Kannan Cuisine'. Thanks for the wonderful recipe. I'v never tried cake without eggs, this is my third non-microwave cake making. I made some changes in ingredients and made, it turned out really well too. Ingredients: 1. All purpose flour/Maida - 1 cup, 2. Sugar - 3/4 cup, 3. Baking powder - 1 tsp, 4. Fresh cream milk - 3/4 cup, 5. Melted Unsalted Butter - 1/2 cup, 6. Vanilla extract - 1 tsp, 7. Solid butter and sugar granules for topping. How to make Vanilla Butter cake?! 1. In a bowl, add all the dry ingredients (Maida, sugar,baking powder) and mix well. 2. Now add the liquid ingredients one by one slowly, i.e., Milk, vanilla extract and melted butter. Mix well till the cake mix is smooth. 3. Grease a ceramic/cake vessel with butter and convert the cake mixture covering with a aluminium foil tightly. 4. Heat water in the electric rice cooker, place this cake mix and close the lid. Let it cook for 40mins. 5. Remove and check with a knife, if done the knife would come out smoothly without sticking. If undone, cover and place in the cooker, make sure there's enough water in it. Cook till done. 6. Uncover, cool and place a plate on top of the bowl and invert. The cake would be ready. 7. Grate the butter and place on the middle of the cake and sprinkle some sugar granules just to give a buttery finish...:) This dish also runs to The Worldwide Blogger BakeOff tagged to me by Shama Nagarajan.
