Oat Bran Muffins
I’m finally home! There’s nothing like sleeping in your own bed, and eating something from your own kitchen. So this morning I decided to whip up some oat bran muffins from the new edition of Simply in Season. 2/3 cup brown sugar 1. Mix brown sugar through molasses in a bowl. 2. In another bowl, mix the rest of the ingredients. Add to the wet ingredients. 3. Bake in a greased muffin pan (fill cups about 2/3 full) in a preheated oven at 400F for 18-20 minutes. Servings: 12 The verdict: Very tasty, but a little dry. I’m also wondering if a little applesauce would taste good. Overall they were yummy even plain (I’m sure DH will add gobs of butter when he gets home from his morning run). I like the little textures of the sesame seeds, bran, the nuttiness of the germ.
