Oatmeal Cranberry White Chocolate Chunk Cookies
Now that Autumn is officially here, I’m looking forward to baking things with my favorite fall flavors and spices. That includes cranberries, whether they’re fresh or dried. I first tried this cookie recipe last year and really liked it. It’s from Ocean Spray® (the photo is, too), and these yummy cookies are packed with healthy ingredients like oatmeal and dried cranberries. And just to make sure they’re not too healthy, there’s some white chocolate chips sprinkled in INGREDIENTS: 2/3 cup butter, softened 2/3 cup packed brown sugar 2 large eggs 1 1/2 cups old-fashioned oats 1 1/2 cups flour 1 teaspoon baking soda 1/2 teaspoon salt 1 (6-ounce) package dried cranberries (the Ocean Spray® brand is called Craisins®) 2/3 cup white chocolate chips (or chunks) Preheat oven to 375 degrees. In medium bowl, blend butter and sugar together until light and fluffy. Add eggs and mix well. In another bowl, combine oats, flour, baking soda, and salt. Add half of this flour mixture to the egg/butter mixture and mix well; then add in the rest of the flour mixture and mix all ingredients well. Fold in the dried cranberries and white chocolate chips and stir until evenly distributed in batter. Drop by rounded teaspoonfuls onto ungreased cookie sheets and bake for 10-12 minutes, or until golden brown. Cool on wire rack. Makes about 2 1/2 dozen cookies.
