Oats Chocolate Cream Cookies for Christmas Makes: 20 Cream Cookies Ingredients For Oats Cookies: 185 g cooking margarine or butter 1/2 cup castor sugar 1/2 teaspoon vanilla essence 1 rounded teaspoon golden syrup 1 cup flour 1/2 level teaspoon soda bicarb 2 cups quick cooking oats 1 tablespoon water For Chocolate Filling: 50 g butter 1/2 cup icing sugar mixture 1 slightly rounded tablespoon cocoa Method For Chocolate Filling: Cream butter. Sift icing sugar and cocoa together. Add to the butter and beat together. A few drops vanilla essence could be added if desired. For Oats Cookies: Cream butter, sugar, vanilla essence and golden syrup until light and fluffy. Sift flour and soda bicarb together. Add to the creamed mixture with the oats and water. Mix well. Place slightly rounded teaspoons of the mixture onto well - greased baking trays ( use level teaspoons of mixture for small dainty biscuits). Bake in a moderately hot oven at 200 * C or 400* F for 20 to 25 minutes. Remove from oven. Allow biscuits to cool on trays for a few minutes only, then remove with a flat spatula and cool on a wire rack. Join together in pairs with Chocolate filling. Store in an airtight container.
