Oh Sweet Valentine.
Valentine’s Day was everything I dreamed it would be, and more.
There was sugar, there were hugs, there was chicken grease… What more could a girl ask for? To ensure adequate calories could be consumed, I did my Monday weight routine, followed by a 30 minute interval circuit on the treadmill. Oh, and later I danced around my living room to my new Fergie Pandora station while John studied. It was a blast. So liberating. I forgot how much I liked Beyonce’s “Single Ladies” and OK Go’s “Here It Goes Again.” They are both so much fun to dance to, seriously. You should probably do that tonight if you don’t already have plans. I would put Beyonce’s video on here too, but I screened and it’s just not appropriate… Post one-woman dance party, I baked my love cookies! I used a new recipe complements of my friend Jamie back in Portland – she’s my favorite little red head : ) Oatmeal Chocolate Chip Cookies I halved the recipe and it made a little more than 1.5 dozen large cookies. 1 cup (2 sticks) butter Preheat oven to 350 degrees. Mix butter and sugar until creamy, add eggs and vanilla. Then add dry ingredients and oats and chips last. Bake 10-12 minutes or until golden brown. I gobbled these up. They were delicious! Oat-y, chocolate-y perfection. Then, as planned, John and I hopped in the car and went to pick up dinner: fried chicken! I hadn’t had any since last Valentine’s Day and it sounded seeeeriously good. Can we just talk about how amazing Church’s Chicken is for a second? BECAUSE IT IS. We ordered a spicy 10-piece meal with mashed potatoes and gravy and corn on the cob for sides, and it came with four biscuits. OOoohhhhh deeeaarrr. We were so excited to get home and dig in. We’d picked up some Woodchuck Granny Smith Apple Cider over the weekend, and I’d also made some baked beans before we left. Fried chicken without baked beans is sin. We got all set up on our dinner trays and realized that Nacho Libre was still packed up in a box somewhere. And since I’m not one to delay a hot meal, we opted instead for a new Netflix we’d just gotten in the mail called “My Kid Could Paint That.” It was no Nacho, but we stilled liked it. This plate, by the way, was round 1. Rounds 2 and 3 may or may not have ensued. We were so happy that our corn came on a stick, just like on Nacho Libre! “Get that Corn Outta My Face!!” I don’t know how we managed to get these pictures. Our fingers were so greasy. And the entire meal we were both muttering, “Mmmmmm, soo good. Seriously so good.” Ha, it was awesome. We’re quite the pair. So obviously, my Valentine’s Day was A+. How was yours?
