Okra or Bhindi Masala
10-12 Baby okra or bhindi 2 tsp groundnut powder 1 tsp sambar masala 1 tsp pavbhaji masala 1 tsp chole masala 1 tsp garam masala 1 tsp coriander powder 1/2 tsp cumin powder 2 tsp red chilli powder 2-3 boiled tomato 2 inch ginger 7-8 garlic cloves 1/2 tsp turmeric powder 2 chopped green chillies 1 chopped onion 10-12 curry leaves oil salt Method : Slit bhindi length wise. Heat oil in a pan. Fry bhindi till it becomes soft. Keep aside. Make puree out of cooked tomtoes. Strain and keep aside. Take 1/4 cup of water in a bowl. Mix groundnut powder, sambar masala, pavbhaji masala, chole masala, garam masala, coriander powder, cumin powder, red chilli powder, turmeric powder, ginger and garlic. Blend this mixture. Make a thick paste. Keep aside. Heat oil in thick bottom kadai, add curry leaves and chopped onions. Fry them to soft. Now add masala paste and fry them for few minutes. Then add tomato puree, salt and 2 tblsp water, mix everything very well and cover a lid. Cook this masala on a low heat for few minutes. Then add bhindi. Cook them again for 3-4 minutes.
