On A Roll?

Gena was the inspiration behind dinner for S and K tonight. I made these Cucumber Rolls a while back during the Raw Wednesday Challenge and have been wanting to make them ever since. They are super healthy and make for a beautiful presentation.


 


After making myself a late lunch of organic baby greens, chopped pink lady apple, cucumber, goat cheese and chicken,

I got to work.


 


I started by thinly slicing an organic seedless cucumber, then layering on some avocado (with fresh lemon juice squeezed on so it didn?t brown), carrot, red bell pepper and fresh basil.

Then, I rolled it up?

Prettyyyyyyyyyy. To go with it I whirled up a quick peanut sauce; fresh ground peanut butter from Fresh Market (in fact, I got such a small amount that they just gave it to me!), rice wine vinegar, honey, fresh ginger, garlic, crushed red pepper?and I think that?s it? I tend to just throw in whatever sounds good at the time!

To go with the Cucumber Rolls I made some shrimp?

I always forget how healthy and quick shrimp is! And I?m craving some big time now. I took off the tails (for some reason I found this to be really fun! Kinda soothing? Weird?) then seasoned these guys up with some EVOO, fresh lemon juice, salt, pepper and fresh basil and sautéed them in a pan until they were done. Very light, very healthy. These  shrimp went on a bed of fresh arugula with mango, which happened to escape the paparazzi tonight!


 


I?m sure if I had been around when the shrimp was consumed Stephen would have made numerous jokes at my expense about how the size of the shrimp reminds him of me?oh the joys of being short!  Luckily the feedback tonight was about the flavor of the food?not the size Tongue out The Cucumber Rolls were a hit?actually the ?freggin? BOMB!,? in the words of the new parents. I guess you could say I?m on a roll?Get it? Ok, I?m on a roll with the food, not with the jokes.


 


It?s been quite a day! Yoga this morning (still no backbends?booooo!), lots of errands, cooking, work at the studio and now finally home. I love staying busy like this but it feels good to have my feet up!
