I'll work backward from last night to yesterday morning but before I do. The weather yesterday? A-MAZ-ING. The proof:
(the thermometer was in the sun, but it was still gorgeous even in the shade) from the kitchen window the first flowers! the weather had me overjoyed and loving life I went to The Paramount, a restaurant in the Beacon Hill area which serves American cuisine, last night with a group of five other friends for a birthday. We got there around 7 and had to wait about 30-45 even though they said the wait would be about 15-20 minutes. It was okay for me because I had a lot of food earlier in the day (including and not limited to: a cupcake and cookies for breakfast, salmon and hummus on pita for lunch, snack snack snacking....). It was really busy, loud, and small. Nice energy, but on a Friday night, it get loud, so I wouldn't recommend it for a quiet date night or a good heart-to-heart conversation. We had all had plenty of time to look at the menu, so we ordered right away after being seated. They had some good specials, but a few of them were all gone. Thankfully I got the last P.E.I. mussels and baby shrimp in a white wine and butter sauce with onions and herbs. It was an appetizer, but I got it as my entree. It was really nice. The mussels were huge, but still tasty and tender and the shrimp added another nice texture. The broth was pretty good too and I wished I had asked for a spoon to drink some up : ) Three of my friends got the Paramount Burgers and the other 2 got chicken piccata. Not very original options, but hey, it's their choices and they looked very good and everyone said their food was very good. The service was very good, too, despite the busyness of the restaurant. There was never and empty water glass and when my plate was taking a while (something happened in the kitchen), the waitress was very apologetic. Also, there was no problem with substitutions. Mashed potatoes instead of fries? Sure. Sweet potato fries instead of regular ones? No problem. Overall, I liked small like The Paramount': l appreciated the service, enjoyed the food, and had a good time with friends. Moving back some hours to Saturday morning. I made Beatty's chocolate cupcakes (I halved the recipe) with vanilla whipped buttercream frosting (no rosewater in mine, though). I also found another recipe for super soft chocolate cupcakes, which I would like to try sometime. My only change in the cupcakes, I used plain yogurt instead of buttermilk and the for the frosting.... Well, I messed something up, but it was okay in the end. Since I halved the cupcakes recipe, I did the same with the frosting and I think I forgot the reduce the milk, maybe? I don't know. But I fixed the frosting by adding more confectioner's sugar, butter, vanilla, and a bit of almond extract just for fun. I would like to try to make frosting again so I can see how it turns out when made correctly. I would also definitely make the cupcakes again; they were chocolatey with a great texture. Great recipe. the cupcakes before being cooked (with my homemade cupcake wrappers, aka wax papers) after being baked I also made herb beer bread. I used this beer: Next time I would try a lighter beer because I didn't like the flavor it added to the bread after it was cooked. It was still pretty good, though. I wasn't sure what herbs to use or how much (the recipe just says Italian herbs) so I used these: the fizzy, bubbly batter very sticky see? in the pan done... and out of the pan the inside after my first slice my bread is fairly light because I forgot to put the butter on the top until there were five minutes left
