My parent have people over for a BBQ/get-together and I have locked myself away in my room except to run downstairs, snatch food, and bring it to my room. Everything is is delicious, but the people are their friends and I'm feeling somewhat antisocial and don't want to talk to them. I'm also lazy hehe. But not lazy enough not to make (and receive several much appreciated compliments on)....

Chocolate cupcakes with buttercream mocha frosting! The cupcake recipe is from Jessica Seinfeld's Deceptively Delicious cookbook. The thing about this cookbook is she always hides a healthy ingredient in whatever she makes and in this case, it's 1 cup of avocado instead of butter or oil. Avocado are high in fat, but have the healthy type called monounsaturated fat. I'm not saying these are healthy cupcakes, but just healthier.

Well, that is until you put frosting on it : ) I made up the buttercream mocha frosting using butter (1/2 a stick?), confectioners sugar, 1 egg yolk (leftover from the cupcake recipe and inspired from a previous frosting recipe I used, also for a J Seinfeld dessert, found here), vanilla extract (1/2-1 tsp?), milk (just a bit- maybe 1-2 TBL), and less than 1 TBL of instant coffee granules. I just fooled around with it until it tasted right, so I can't really be more specific than that. I've never tried Mrs. Seinfeld's frosting, but you ever do, let me know how it is: I'm very curious!

My variation on the recipe was I lined the cupcake pan with wax paper instead of buying/wasting money on cupcake liners and most importantly, I put 4 chocolate chips in each cupcake before cooking it. Because of this, when you test the cupcakes for doneness, put the tester in at an angle so it doesn't touch the melted chocolate chips inside and make it seem like the cupcake itself isn't done.

I made 1/2 a batch which that made 9 lovely cupcakes and took 15 minutes.
