Ingredients:
Dressing
2/3 cup plain yogurt
1/3 cup frozen apple juice concentrate, thawed and undiluted
1 Tablespoon fresh lemon juice
2 teaspoons honey, or to taste
1/3 teaspoon freshly grated black pepper, or to taste
Salad
1 1/2 cups raw carrots, peeled and shredded
1 1/2 cups tart apple (i.e. Granny Smith), peeled, cored and finely chopped
1/2 cup celery, finely chopped
1/2 cup raisins, dark or golden
1/3 cup blanched slivered almonds

Preparation:
For Dressing: In a small bowl combine the yogurt, the apple juice, the lemon juice, the honey and the pepper. Whisk to blend. Cover bowl and refrigerate until ready to use. Will keep, refrigerated, for one week.
For Salad: In a medium bowl combine the carrots, the apple, the celery, the raisins and the almonds, Toss to blend. Add enough dressing to moisten salad, tossing to blend. Cover bowl with plastic wrap and refrigerate for one hour before serving.
