Ingredients:
Brinjal - 250gm
Grated Coconut - 1/2 cup
Channa Dal - 1 tbsp
Red Chillies - 4
Corriander Seeds - 2 tbsp
Methi Seeds - few
Cooking oil - 4tbsp
Salt - 2 tbsp
Asfetodia - 1 pinch
Curry Leaves - few

Preparation:
- Heat 1tbsp of oil in a kadai and add channa dal,methi seeds,corriander seeds,red chillies.
- Let them splutter and now add the grated coconut and asfetodia.
- Keep frying until the coconut turns golden brown. Now grind them to fine powder and keep it aside.
- In the same pan pour 2tbsp of cooking oil and add mustard seeds,curry leaves. Let them splutter
- Add brinjal and 2 tbsp of salt. Saute them for about 5 minutes and close the frying pan.
- Let brinjal be cooked. After 10 minutes add the ground powder which we have prepared.
- Keep frying for sometime until the brinjal becomes slightly crisp in nature.
- Now brinjal fry is ready to be served.
