1 cup yellow cornmeal
1 cup whole-wheat flour
1 tablespoon baking powder
1 teaspoon baking soda
1/3 cup sugar
1 tsp salt
1 chopped red pepper (only half the batch had red pepper)
1 tbsp Honey
1 Tsp cinnamon
1 1/2 cup buttermilk
2 large eggs
1/4 cup unsalted butter
1 cup sharp cheddar cheese, grated
1 cup corn nibblets
1 TSP cayenne pepper

Preparation:
DIRECTIONS
Use two mixing bowls. One for dry ingredients and one for liquids
Preheat oven to 375- 400 f. Grease a standard sized muffin tin with PAM or butter. I used PAM.
Step 1: In a large bowl mix together all the dry ingredients: flour, corn meal, sugar, baking powder and salt ect.. Set aside
Step 2: Beat the eggs and add the buttermilk and cooled melted butter. Stir to combine all the ingredients.
Step 3:Add the wet ingredients to the dry along with the grated cheese and corn.
Step 4: Divide equally in the muffin tin.
Bake for 30 minutes or until muffins have risen a bit and are golden on top. Let cool for 10 minutes before removing from the tin.
Note* Make sure you don't have a dog around when they come out of the oven. I almost killed my friends Boxer because a piping hot muffin fell out of the muffin tray and straight into his mouth. Poor pooch :(
