Ingredients:
1/4 cup cake flour
1 1/2 cup grated coconut
1/4 cup icing sugar
25g raisins
2 egg white
1 tsp vanilla essence
1/4 tsp salt

Preparation:
Marie bein (a pan over another pot of boiling water)sugar, salt and egg whites. Gently whisk to get a warm and creamy thick liquid. Remove and let if cool down for 5 mins.
Add vanilla, flour, coconut and raisins. Mix all together and leave it in the fridge for about 2 hours.
Grease the baking tray with some butter/margarine, scoop the dough bit by bit and place on the tray. Bake at 200c for 30 mins or until the cookies turns golden brown.
