Ingredients:
Cauliflower-2 cups cut into bite size florets
Peas-1/2 cup
Potato-1 large cubed
Onion-1 cubed
Capsicum-1 cubed
Mustard seeds-1 tsp
Cumin seeds-1 tsp
Coriander powder-1 tblspn
Garam masala powder-1 tsp
Pepper-1 tblspn or as per taste
Salt to taste
Oil-1 tblspn
Curry leaves-2 springs

Preparation:
Take a microwave safe bowl,add in potato and cauliflower in it..Sprinkle with a tsp of salt in it.Cover it and microwave on high for about 3 min.Take it out and set aside for a moment.
Add oil in a kadai and let it heat up..Crackle some mustard and cumin seeds in it.
Add in Onion and fry for 1 min.Add in the par cooked potatoes and cauliflower in it and mix well.Season with salt...Cover it and let it cook till it gets golden brown.
Add in peas and capsicum and fry for 3 min.
Add in coriander powder and garam masala powder and mix well.
Sprinkle with pepper and mix well.
Take a small frying pan add a tsp of oil and fry the curry leaves till it gets crispy.
Throw this crispy curry leaves in to the veggies and toss well.
Serve hot with rice or roti..
