Ingredients:
150g long beans (cut into 3/4 inch pieces)
60g cashew nuts
2 tbsp grated coconut
1 red chilly (remove seed and sliced thinly)
2 shallots (diced)
3 tbsp olive oil
salt to taste

Preparation:
When oil is heated, fry the cashew nuts until brown and crunchy.
Add in the shallots, chilly and grated coconut.
Continue cooking and stirring for 2-3 mins.
Add in the long beans and salt to taste, stir and pour in about 5 tbsp water to soften the beans.
Once the water dries up, remove from heat.
