1 cup pecan
1 cup grated Parmesan
1/2 cup cottage cheese
1 tbls basil chopped
1 tsp oregano
3 cloves garlic minced
1/4 onion minced
7-8 slices Italian bread toasted
4 eggs
mozzarella shredded
crushed red pepper to taste
Favorite marinara sauce
Preparation:
Preheat overn to 350 degrees. Prepare a 9×13 glas baking dish with cooking spray. Process the pecans in a food processor and place into a large bowl. For the bread crumbs I toasted 8 slices of Italian bread sprayed with olive oil, salt and garlic powder (ended up using only 6 slices, maybe because they were large slices) in the oven at 250 for about 20 minutes and turning them over half way through. Add the bread crumbs to the pecans along with the rest of the ingredients. Stir with a fork until very well blended or you can mash with your hands if you like. When mixture is fully mixed start rolling into 2 inch balls. If the mixture is too sticky spray your hands with cooking spray. I didnt need to do that, they rolled out easily. Now place in the oven and bake for 40 minutes.
