One-eyed jack w/ insalata caprese on a skewer

Ingredients:

ONE-EYED JACK:
1 slice of Corn bread
1 fresh egg
dash of pepper & salt

INSALATA CAPRESE ON A SKEWER:
2 pcs sweet cherry tomatoes
2 pcs mini mozzarella balls
2 pcs fresh sweet basil leaves
extra virgin olive oil
salt & pepper
Italian seasoning
skewer
  Preparation:

ONE-EYED JACK:
i used my round cookie cutter to cut a hole in the center of the bread.
remove the center. (you can also use the open end of a drinking glass
to cut a hole.)

toast the bread a bit on both sides.

put the toasted bread in a non-stick pan.

break the egg into the hole of the toast.

sprinkle pepper & salt to taste.

cook egg either sunny side up.

or you can flip the bread once you are able to push it
without sticking in the pan and with less effort.

optional: with cheese of your choice
top the egg with cheese before flipping the toast,
so the cheese melts on one side.


INSALATA CAPRESE ON A SKEWER:
put the cherry tomatoes in a baking tray.

sprinkle with bit of Italian seasoning, salt & pepper.

splash with extra virgin olive oil.

bake for 15 minutes @ 300 degrees C.

thread the baked cherry tomato alternately with mini mozzarella balls
and basil leaves using a skewer.

serve immediately.
