Ingredients:
4 boneless skinless chicken breasts
8 cups Chiclken broth
1/4 tsp poultry seasoning
Salt and pepper to taste
4 cups uncooked long grain rice
1/3 c Soya sauce
3 Celery ribs finely chopped
1 cup mixed red and green sweet peppers finely chopped
3 minced garlic cloves
1 onions finely chopped
4 spring onions finely chopped
1 cup mushrooms (optional)
1/4 cup cooked bacon chopped

Preparation:
Preheat oven 350*
simmer chicken breasts in chicken broth, poultry seasoning, salt and pepper until cooked.
Remove chicken but reserve the broth.
Cut up chicken to make 4-5 cups of cubes.
In large casseole place all remaining ingredients, including chicken and broth.
Cover and bake 1 1/2 hour stirring twice.
