Ingredients:
3 (abt 370g) green unripe bananas/plantain
5 shallots - sliced
50g pistachios (without the skin)
4 dried red chillies - snip into small pieces with a kitchen scissors
3 sprigs curry leaves
1/2 tbsp turmeric/kunyit powder
1/2 tbsp lemon/lime juice
3 tbsp oil
salt to taste

Preparation:
Peel the skin from the bananas and add into a pot with enough water to cover it.
At the same time, mix in the turmeric/kunyit powder and a bit of salt to taste.
Boil until the bananas becomes soft. Drain off the water and let it cool down.
Mash up the boiled bananas and keep aside.
Heat oil and when heated, put in the shallots and saute to soften for about 3-4 mins.
Next goes in the pistachios, dried chillies, curry leaves and a pinch of salt.
Keep stirring and frying for another 3-4 mins.
Add in the bananas and pour in the lemon/lime juice.
Continue to stir to combine all the ingredients in (abt 2-3mins)
Remove from heat.
