Ingredients:
5 medium size (abt 400g) potatoes - boiled and sliced with the skin on
3 tbsp (40g) anchovies - soaked in water for 10 mins and drained
2 red chillies - remove seeds and sliced
2 green chillies - remove seeds and sliced
5 shallots - sliced thinly
3 sprigs curry leaves
3 tbsp olive oil
salt to taste

Preparation:
When oil is heated, fry the anchovies until crispy and dark brown in color.
Add in the shallots and chillies.
Continue to fry to soften the shallots and chillies for about 3-4 mins.
Add in the potatoes, curry leaves and salt to taste.
Stir and cook until the potatoes have completed blended with the rest of the ingredients.
Once the skin of the potatoes turns brown in color, remove from heat.
