Ingredients:1 bunch (about 400g) spinach - remove roots, wash thoroughly and sliced thinly
1 (about 200g) tomato - sliced thinly
5 garlic - chopped
1 onion - chopped
2 sprigs spring onions - sliced thinly
1/2 liter stock (any you prefer, I used vegetable stock)
2 tbsp oil
Salt and pepper for taste
Preparation:Step 1 When oil is heated, fry garlic and onion till soften.
Add tomato and continue stirring for another 1-2 mins.
Pour in the stock and let the soup simmer.
When heated through, season with salt and pepper.
Drop in spinach and off the heat.
Stir well and serve immediately, garnished with spring onions.
