Pakodi Chaat

Ingredients

500 g flour
500 g rawa ( sooji )
1/4 teaspoon baking powder
250 g kabuli chana, boiled with enough salt
250 g khajur ( dates )
250 g tamarind or 3 tablespoon tamarind paste
1 bunch mint leaves
1 bunch coriander leaves
3 green chillies
Curd beaten with enough salt
1 tablespoon coriander leaves, finely chopped
A little buttermilk for mixing the dough
Black salt to taste
1 cup sev ( optional )
Oil for frying

Method

Soak tamarind in enough water water and extract pulp.

Grind khajur ( dates ) and tamarind pulp or paste to a fine chutney.

Grind mint leaves, coriander leaves and green chillies to a fine paste.

Mix 250 g rawa and 250 g flour well. Add one teaspoon salt and enough water to bind to a hard dough. Divide the dough and roll out small thin puris. Fry in hot oil and keep aside.

Mix remaining rawa, baking powder and flour. Add the buttermilk to mix to a smooth dough. Divide and roll out the mixture into small round balls. Deep fry the bhajias in hot oil till well browned. Drop the bhajias in a rather liquidy khajur - tamarind chutney.

While serving, arrange two coarsely crushed puris in a plate. Arrange the fried bhajias over it. Sprinkle a few chanas, followed by curd, black salt to taste, khajur - tamarind chutney and green chutney.

Garnish with coriander leaves a few crushed puris and sev ( optional ).
