Pancake sandwich

By Emily Eats Clean (Visit website)

Good morning.  Happy Monday bloggies!!  :D

What a productive day it’s already been:

gym
grocery shopping
reorganizing/cleaning out the freezer
breakfast
getting ready for work
laundry/dishes/making bed/picking up around the house
blogging  (currently)   :)

Whoo hoo!!!  Before recapping today, late night munchies occurred last night:

1 cup Cascadian Farms organic kids Cinnamon Crunch with 1/2 cup skim milk……perfect sweet-tooth fix!

Now, let’s get on with today…..I got up about 5:20 to head to the gym for a 6am Power Pump.

Preworkout fuel:

Almond butter sandwiched between 2 pancakes leftover from breakfast yesterday morning.  I’m thinking I’m gonna freeze some of these babies for enjoying later on.  I can freeze pancakes, right?!?!

Following a great Power Pump class, I headed to the grocery store.  I got some good stuff, but geez I’ve killed the grocery budget this month….eek.  Must.do.better.next.month!

Got home and put up groceries and cleaned out/reorganized the freezer.  Then began on breakfast!

Tyler, I bought Almond Milk……are you happy?!?!?  :)

I decided on spelt flakes this morning instead of regular oats.  Into a bowl went:

1/2 cup spelt flakes
3/4 cup almond milk
1 chopped fuji apple
lots of cinnamon

Into the micro it went for 3 minutes.  Got it out, stirred, and added a drizzle of agave nectar and some chopped walnuts

Pretty good……spelt flakes might be better actually cooked on the stove top though.  And lets not forget, the misto on the side

YUM!

Mondays are always funny at work…..apparently people don’t want OT on Mondays.  Therefore, I’m home and I’ve gotten lots of things done around the apartment.  The apt. is officially up to my “clean” standards EXCEPT for floor mopping……..must.find.motivation!!!!   Gag on mopping.  What chore do you despise????

Okay, I’m going to go mop      (I think….)
