Panko Crusted Flounder with Coconut-Ginger Rice and Pico de Gallo

We've been tasked with out first project as apart of our final for level 2 in culinary school and i'm thrilled that we get an opportunity to showcase our creativity. In honor of my home state of Florida, I came up with a bright and colorful dish that delivers a tropical punch: panko crusted flounder with coconut-ginger rice, crispy shallots, and fresh pico de gallo.
